Alpha Amylase: Overview
Alpha-amylase is an enzyme that catalyzes the breakdown of starches into simpler sugars like maltose and glucose. It acts by cleaving the alpha bonds of large, complex carbohydrates, making it essential for the digestion of starchy foods such as bread, potatoes, and rice. Alpha-amylase is produced naturally in the human body, primarily in the saliva and pancreas, where it begins the digestive process in the mouth and continues in the small intestine.
In industrial applications, alpha-amylase is widely used in the production of sugars and syrups from starch, in baking to improve the texture and shelf life of bread, and in brewing to break down starches into fermentable sugars. It’s also used in laundry detergents to help remove starch-based stains and in the paper industry for the modification of starches used in paper coating and sizing.
