Phytase: Overview
Phytase is an enzyme that breaks down phytic acid (phytate), a form of phosphorus stored in plants, particularly in seeds and grains. Phytic acid can bind essential minerals like calcium, zinc, and iron, making them less available for absorption in the digestive tract. Phytase helps release these bound minerals, improving their bioavailability and promoting better nutrient absorption.
In animal nutrition, particularly in poultry and swine diets, phytase is added to feed to enhance phosphorus utilization, reducing the need for supplemental phosphorus and minimizing environmental phosphorus pollution. Phytase is also used in the food industry to improve the nutritional value of plant-based foods by increasing mineral absorption in humans.
